With our tomato bush still providing us the sweetest, juiciest tomatoes ever, I made a simple caprese salad for with fresh mozzarella, basil leaves, sliced tomatoes, drizzled with balsamic glaze, olive oil, and sprinkled with sea salt and pepper. The perfect accompaniment to our Father’s Day dinner of steak, baked potatoes and corn on the cob, and the perfect way to showcase the gems of our summer harvest.
Other meals that week included:
Chicken, black bean and quinoa bowls with mango and fried bananas: I’ve made this before and it was really good, however, this time I wasn’t as impressed or maybe didn’t make it as well? Good combination of flavors in general though and made enough for two dinners.
Grilled pork chops, zucchini and baked white sweet potatoes: I simply season the chops with salt, pepper, and Trader Joe’s Everyday Seasoning, which literally tastes good on EVERYTHING, and we grill them just til done through. Such a yummy, easy grilled meat.
Chili and Lime Chicken Burgers and sweet potato fries: Trader Joe’s hits it out of the park with these frozen chicken patties. We serve them with smoked gouda, tomato, avocado, and basil aioli (a dollop of mayo with fresh basil and garlic salt), and often sweet potato fries. This time I seasoned the fries with cumin, coriander, cinnamon, paprika, garlic salt, and cayenne pepper.
