Eggs. Best food ever, am I right? I think I could eat them for a few meals a day, every day, and not tire of them. But it is fun to mix them up sometimes, and this week rather than my usual baked egg casserole, I decided to whip up a scramble to eat all week. And it was yummmmm. No recipe really needed, but here’s what I roughly included:
Sautéed onion, greens and zucchini
Beef chorizo sausage, cooked and drained
I whipped up a big batch and just throw a bit in a bowl each morning, reheat, and enjoy.
